The Seven Sensational Summer Salads for Backyard Barbecues


Cucumber Onion Tomato Salad
1 white onion, sliced
1 beefsteak  Tomato, halved & sliced
1 Cucumber, peeled & thinly sliced
1/2 cup Olive Oil
1 tsp  Salt
Freshly Ground Pepper, to taste
1 clove garlic, minced
– Add all ingredients and let marinate overnight. Serve chilled with a slotted spoon.


Summer Corn, Avocado, & Black Bean Salad
1 can corn, drained (or 2 fresh ears if available!)
1 can black beans, rinsed & drained
1 Avocado
1 can chunky Rotel (original works too)
2 tbsp cilantro, chopped
– Mix all gently in large bowl, Serve over a grain or with tortilla chips as a dip!
Watermelon Salad with Coconut Lime Dressing
1   5 lb seedless baby water melon, cubed
1 lb baby cucumbers, diced
1/2 red onion, thinly sliced
1 cup loosely packed mint leaves, roughly chopped
1/4 cup olive oil
1/4 cup coconut cream
2 tbsps fresh lime juice, & zested
– Whisk together olive oil, coconut cream, lime juice & zest. Add remaining ingredients & toss to coat. Refrigerate 30+ minutes. Toss again & serve chilled.
California Spaghetti Salad
1 lb thin spaghetti noodles, cooked and cut
2 cups cherry or grape tomatoes, halved
2 medium zucchini, chunkily diced
1 cucumber, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1/2 red onion, diced
2   1/4 oz cans sliced black olives, drained
1   16 oz bottle Italian dressing
1/4 cup grated Parmesan cheese
1 tbsp sesame seeds
1 tsp paprika
1/2 tsp celery seed
1/4 tsp garlic powder
– Add all vegetables and mix in pasta. In another bowl, whisk remaining ingredients. Pour over pasta and mix in. Cover & refrigerate 3, or more, hours. Serve Chilled.
Caprese Salad
1 – 2 beefsteak tomatoes
fresh Basil, can leave whole, slice, or finely chop (I like to use one whole leaf per slice of tomato)
1 ball of fresh Mozzarella
Olive Oil
Balsamic Vinegar
Freshly Ground Pepper
Garlic Powder
– Slice tomatoes & mozzarella. Place tomatoes on platter. Place slice of cheese on top. Sprinkle salt, pepper, & garlic powder, to taste. Add basil leaf to each. Drizzle with olive oil & balsamic vinegar.


Mediterranean Cucumber Salad
3 medium sized cucumbers, cubed
2 cups grape tomatoes, halved
1 small can sliced black olive
1 pkg feta cheese, crumbled
1/2 red onion, minced (finely chopped)
2 tbsp olive oil
2 tbsp balsamic vinegar
2 tsp fresh oregano
– Toss vegetables in bowl. Add oil & vinegar, oregano, & mix. Sprinkle with feta cheese. Serve chilled.


Pasta Salad
4 cups cooked elbow macaroni
3 pieces of bacon, cooked until extra crisp & crumbled
3 lettuce leaves, shredded
1 tomato, diced
1 cup broccoli
1 ball burrata
2 tbsp Olive Oil
1 tbsp Lemon Juice
Salt & Pepper
– Add all ingredients & mix. Serve chilled.
