Pumpkin Crumb Muffins with Maple Icing

The month of October is National Pumpkin Month! And I seriously love all things pumpkin. Which is why I am dedicating a blog post a day to share a yummy pumpkin recipe. The first one I am sharing is for pumpkin crumb muffins. These are TO DIE FOR! I mean, they are the most delicious muffins I have ever had and they taste just like a bite of fall would taste.

 

Makes 15 muffins.

 

Ingredients:

Muffins:

1  3/4 cups flour

1 tsp baking soda

2 tsp cinnamon

1 tsp pumpkin pie spice

1/2 tsp salt

1/2 cup olive oil

1/2 cup sugar

1/2 brown sugar

1  1/2 cups pumpkin puree

2 large eggs

1/4 cup milk (room temperature)

 

Crumb Topping:

3/4 cup flour

1/4 cup sugar

1/4 cup brown sugar

1 tsp pumpkin pie spice

6 tbsp melted butter

 

Maple Icing:

1   1/2 cups powdered sugar

2 tbsp maple syrup

2 tbsp milk

 

Directions:

  1. Preheat oven to 425 degrees. Spray a muffin pan, or use liners.
  2. In large bowl, whisk together dry ingredients for muffins. In medium bowl, whisk together wet ingredients for muffins. Pour the wet ingredients into the dry ingredients and fold in.
  3. Spoon mixture into muffin  pan.
  4. Whisk together all ingredients for crumb topping, except butter. Stir in melted butter until crumbs start to form. Spoon crumbs on top of batter, and press downy gently.
  5. Bake for 5 minutes. Reduce temperature to 350 degrees and bake for an additional 16-18 minutes. Let cool for 10 minutes.
  6. Whisk all icing ingredients together until smooth. Drizzle over muffins. Serve warm.

    ask if you do not mind. I was interested to find out
    how you center yourself and clear your thoughts prior to writing.
    I have had a hard time clearing my thoughts in getting my ideas out there.
    I do take pleasure in writing but it just seems like the first 10 to 15 minutes tend to be lost just trying to figure out how to begin. Any suggestions or hints?
