Avocado Toast with Cajun Shrimp

Breakfast is a special time, being the first meal of the day. And what better way to start the day than with avocado toast. I mean, I absolutely love me a good piece of avocado toast. However. I love making different types of avocado toast even more! This cajun shrimp avocado toast recipe is very outside the box. The cajun shrimps add such a good flavor to an already delicious piece of avocado toast. Think you can eat just one piece?


Serves: 4


4 slices sourdough bread

16 small shrimp

2 big cloves garlic, minced

2 tbsp cajun seasoning

2 tbsp lemon juice

1 tbsp fresh parsley, chopped

1 avocado, cubed

1 cup cherry tomatoes, halved


red pepper flakes, optional



  1. Season shrimp with 1 tbsp lemon juice and cajun seasoning.
  2. Heat drizzle of olive oil in skillet on medium high heat. Add garlic. Then add shrimp. Sauté, about 3 minutes each side.
  3. In separate bowl, add avocado, tomatoes, 1 tbsp lemon juice, salt (to taste), red pepper flakes, and parsley. Lightly mix, trying not to smash avocado, until covered.
  4. Toast bread.
  5. Spoon avocado mixture on each piece of toast. Top with 4 shrimp each and extra parsley.

Serve immediately. Enjoy!
