Avocado Toast with Cajun Shrimp
Breakfast is a special time, being the first meal of the day. And what better way to start the day than with avocado toast. I mean, I absolutely love me a good piece of avocado toast. However. I love making different types of avocado toast even more! This cajun shrimp avocado toast recipe is very outside the box. The cajun shrimps add such a good flavor to an already delicious piece of avocado toast. Think you can eat just one piece?
4 slices sourdough bread
16 small shrimp
2 big cloves garlic, minced
2 tbsp cajun seasoning
2 tbsp lemon juice
1 tbsp fresh parsley, chopped
1 avocado, cubed
1 cup cherry tomatoes, halved
red pepper flakes, optional
- Season shrimp with 1 tbsp lemon juice and cajun seasoning.
- Heat drizzle of olive oil in skillet on medium high heat. Add garlic. Then add shrimp. Sauté, about 3 minutes each side.
- In separate bowl, add avocado, tomatoes, 1 tbsp lemon juice, salt (to taste), red pepper flakes, and parsley. Lightly mix, trying not to smash avocado, until covered.
- Toast bread.
- Spoon avocado mixture on each piece of toast. Top with 4 shrimp each and extra parsley.
Serve immediately. Enjoy!
